Caribbean Jerk Fries

I had to physically remove these from my presence because I was about to eat the whole batch.

Sweet potatoes are part of my weekly diet. I love them for their flavor, texture, and high vitamins A and C content. When I meal prep for a week, I will make a big batch of fries to mix in with roasted veggies for an easy lunch. I typically just bake my sweet potato fries with salt and olive oil, but I had jerk seasoning from St. Martin and thought….why the heck not?! This was a very, very, very good choice.

These fries are slightly sweet, which is fabulous because as they bake, they caramelize and get a little crunchy. By adding the coconut oil later in the baking, it leaves the sweetness of the coconut on the fries and that mixes beautifully with the heat of the jerk seasoning. Enjoy!.

Caribbean Jerk Fries

Preheat the oven to 400F

In a bowl, toss the sweet potato fries in maple syrup, olive oil, jerk seasoning, salt and orange oil. Once the fries are coated, pour onto a baking sheet, and bake on the middle rack in the oven for 20 minutes. Take the fries out, and add the coconut oil to the fries on the sheet. Toss the fries in the coconut oil a bit, and place back in the oven for another 15-20 minutes depending on how you well done you like your fries. Remove and mangia (not all in one sitting like I tried to do).
