Date Nut Lime Bites
I get multiple requests for this recipe every single time I make them.
So rather than type it up again, here it shall live forevermore.
Seriously, this is the easiest way to cure a sweet tooth with no refined sugars (just sweetened with dates), and full of healthy fats. I will pop a couple before a workout or hike for the natural boost of energy, and the lime oil makes the flavors POP.
Friends who are tracking your macros, points, calories, all that jazz: I count 5 of these bites as having the same caloric intake as a KIND Fruit and Nut bar and would say you can use the same nutritional facts.
2 cups shelled walnuts
1 cup shredded, unsweetened coconut
2 cups Medjool dates, pitted
2 tbs. coconut oil
1 tsp. sea salt
1 tsp. vanilla
5 drops of Young Living Lime Vitality Essential Oil
Add ingredients in a food processor. Pulse until you can pinch off some of the 'dough' and roll into a ball. You can freeze 'as is' or put in little mini muffin wrappers.
Yeah, that's seriously it. No hassle at all and flipping delicious!
