Katrina: Rose Inspired Sparkling Lemon

One of my favorite places to take a mental holiday is Yaddo Gardens in Saratoga Springs, NY.

These Victorian era gardens were gifted by philanthropist Spencer Trask to his wife Katrina (I know...he wins all the boyfriend awards). Katrina was an artist who surrounded herself with fellow writers, musicians, and actors; a Renaissance woman in every aspect, her second love was roses. Today, the roses at Yaddo remain faithful to Katrina's original design and vision. 

Katrina and Spencer suffered horrendous tragedies during their marriage including the loss of their four children within a couple of years, and finally with Spencer's own death in a freak train accident not long after. Katrina transformed the gardens into an artists' sanctuary, donated them to the city of Saratoga, and they are open to the public.

I love this tough, creative lady's story. It only seemed fitting to design a rose-infused summer drink after her. The beverage is alcohol-free, and is low in sugars. Cheers, Kat!

Katrina (serves 2)

Muddle the raspberries and lemon oil together until there are no lumps. Let sit for 30 minutes in the fridge. When its chilled, pour the mixture into a tumbler. Add ice, and pour the elderberry and rose lemonade over the ice. You can stir if you like, but its so pretty layered. Garnish with edible flowers.
